Abstract In this paper,the effect of bound water on freeze-drying process is studied by analyzing the modeling results based on three different dehydration mechanisms for bound water.The freeze-drying of skim milk in vials is taken as the model sample for simulation.The contents of residual water,material temperatures,drying times and the distributions of water content are investigated.The predicted drying times and moisture profile are also validated by experiments.The results show that the effect of bound water on freeze-drying process is significant.The adsorptionof bound water can not be neglected during sublimation stage.This conclusion is very important for predicting accurately the drying times and the distribution of water content,describing the phenomenon of freeze-drying process and expounding the regular freeze-drying process.
