Abstract To improve the extracting ratio of corn stigma polysaccharide,a new process was developed.The optimum condition of enzymeassisted extraction was obtained through orthogonal test,and the effects of ultrasound on enzyme-assisted extraction was investigated.An optimal hydrolysis condition was achieved with the enzyme load of 5% of corn silk at(50 ��) in water for 170 min.The quantity of polysaccharide was increased by 35.52% after ultrasound treatment.The experiment showed that a combination of cellulase and ultrasound was an effective way for the extraction of polysaccharides from maize stigma.
