Abstract Lipase-catalyzed synthesis of L-ascorbyl palmitate in non-aqueous phase was studied in this paper.The appropriate lipase and non-aqueous medium were obtained,and several factors which effect the reaction were studied.The results show that the optimum reaction conditions are:the Lipase of Novozyme 435 and tert-butyl alcohol are the optimum pair,the molar ratio of palmitic acid/Vc is 3/1,the reaction temperature is 59��,the reaction time is about 50h,the content of Novozyme 435 is 10g��L~(-1),and the purity of L-AP is up to 95% after purified.
