Abstract Lipase-catalyzed synthesis of L-ascorbyl palmitate in non-aqueous phase was studied in this paper. The appropriate lipase and non-aqueous medium were obtained, and several factors which effect the reaction were studied. The results show that the optimum reaction conditions are:the Lipase of Novozyme 435 and tert-butyl alcohol are the optimum pair, the molar ratio of palmitic acid/Vc is 3/1,the reaction temperature is 59,the reaction time is about 50h,the content of Novozyme 435 is 10gL~(-1),and the purity of L-AP is up to 95% after purified.
