Abstract A new synthetic method,by which N-acetyl-L-threonine was produced from L-threonine in alkaline solution using acetic anhydride as acetylation agent,was described.The optimum reaction conditions were that molar ratio of L-threonine to acetic anhydride was 1.00∶1.00—1.00∶1.05,pH of the solution within 7—9,reaction at 10—20 ℃,the time within one hour after the solution became turbid.
