Abstract In this paper, the influences of temperature, pH value, reaction time and amount of enzyme on the hydrolysis process of gelatin by natural AS1.398 neutral protease were investigated. The possibility of AS1.398 neutral protease applied in technology for preparation of gelatin hydrolyzate was discussed.
