Abstract The influences of temperature,pH value,reaction time and amount of enzyme on the hydrolysis process of gelatin by immobilized AS1 398 neutral protease was studied.The possibility of immobilized AS1 398 neutral protease applied in technology for preparation of gelatin hydrolyzate was discussed.
