Abstract�� The amino groups of the gelatin are the amenable sites for modification in aqueous solution. Benzoylation of the gelatin with pathalic anhydride can change the solubility. The reaction with dicarboxylic acid anhydrides results in an acid addition product,which alters the ratio of free basic to free acidic groups in gelatin,so as to lower the isoelectric point. So these products have a lot of new characteristics and uses. Benzoylated gelatin is widely used for the coagulation of photographic emulsions and succinylated gelatin is utilized as a blood plasma expander.��
