Abstract�� In this paper,a model of potential barrier acted on molecules during the microwave-assisted extraction of resveratrol from polygonum cuspidatum is developed.Combined with the theory of viscosity,the relationship between diffusion coefficient and activation energy is expressed.Based on the concept of activation energy and microwave absorption power density,the formula of diffusion coefficient due to the effect of microwaves is derived. The expression indicates that the diffusion coefficient is relevant to the molecule's density,microwave frequency and temperature.It shows that the diffusion coefficient is enhanced in comparison with the coefficient without microwaves.In the process of microwave-assisted extraction,it is better to choose the high microwave frequency at high temperature to enhance the diffusion coefficient.In the extraction of components with the phenomena of thermal runaway,choosing the critical temperature can lead to a greater diffusion coefficient.
