Abstract:
Modified starch industry has a good domestic market prospect.Being non-toxic side effects on the human body,octenyl succinate starch ester is a very important pro-fat modified starch,with emulsifying stability and good effect.As a new food additive,it can be used in various industries,and become the safety of GM additives.In this study,starting from the reaction mechanism,using acetone as the dispersed phase,the experiment was performed.Sodium phosphate was identified as a catalyst for reaction through a number of experiments.Based on this,the most appropriate reaction conditions were found,through explorating the effect of different concentrations of octenyl succinic anhydride on degree of substitution.The most appropriate reaction conditions are as follows: the concentration of OSA is 0.6 mol/L,the volume of acetone is 150 mL,the amount of sodium is 7 g,heating temperature is(40 ℃) and heating time is 4 h.
